6 tbsp flax seed

400g dark chocolate

350g margarine

250g caster sugar

250g soft light brown sugar

4 tbsp malt extract

2 tsp vanilla essence

300g plain flour

1 tsp baking powder

2 pinches salt

4 tbsp soya milk

200g dark chocolate chips


1. Preheat the oven to 150°C.

2. Line a baking tray.

3. In a bowl combine the flaxseed with 18 tbsp of water and mix until combined.

4. Place a pan over a heat with boiling water and add a glass bowl above. In the glass bowl add the chocolate and margarine and melt togehter.

5. Once melted, mix in the soya milk, vanilla essence, malt extract and both the sugars.

6. Next, sift in the flour and fold through along with the baking powder and salt.

6. Add in the flaxseed mix and chocolate chips.

7. Transfer into the lined baking tray and bake for 25 – 30 mins.
