8 plums, cut in half and stone removed
50g caster sugar
2 breakfast tea bags
1 cinnamon stick
2 star anise
4 cloves
1 bay leaf
150g porridge oats
60g coconut oil
40g sesame seeds
40g sunflower seeds
60g pumpkin seeds
60g dates, chopped
½ tsp fennel seeds
½ tsp salt
2 tbsp agave syrup
Coconut yoghurt
To make the spiced plums
1. Place the sugar in pan along with 250ml water, bring to a boil to dissolve the sugar and then add tea bags, cinnamon, star anise, cloves and the bay leaf. Simmer for 3 mins then remove from the heat.
2. Leave for 6 mins then remove tea bag, put back on heat and gently add the plums and cover. Poach gently for around 6 mins, then take off the heat and allow to cool.
3. Once cool, remove the plums and remove the skin. Place the plums back in the liquid, cover and leave in the fridge overnight.
To make the granola
4. Preheat the oven to 180°C.
5. Place the oats, coconut oil, sesame seeds, sunflower seeds, pumpkin seeds, dates, fennel seeds and a pinch of salt in a roasting tin.
6. Cook for around 10 mins stirring occasionally. Drizzle in the agave syrup and roast for a further 5 mins.
7. Remove from the oven and allow to cool.
8. To serve place the granola in bowl, remove plums from the syrup and place onto the granola and finish with coconut yogurt.
