Homemade granola with spiced plums

Ingredients

8 x plums, cut in half & stone removed

50g caster sugar

2 breakfast tea bags

1 cinnamon stick

2 star anise

4 cloves

1 bay leaf

150g porridge oats

60g coconut oil

40g sesame seeds

40g sunflower seeds

60g pumpkin seeds

60g dates,chopped

½ tsp fennel seeds

½ tsp salt

2 tablespoon agave syrup

Non dairy yogurt

Instructions

·        Place sugar in saucepan along with 250ml water,bring to a boil to dissolve sugar & then add tea bags, cinnamon, star anise, cloves & bay leaf, simmer for 3 minutes then remove from heat. Leave for 6 mins then remove tea bag, put back on heat & place in plums &cover. Poach gently for around 6 minutes, allow to cool. Once cool, remove plums & take of skin. Place back in liquid & cover & leave in fridge overnight.

·        To make the granola, put oats, coconut oil,sesame seeds, sunflower seeds, pumpkin seeds, dates, fennel seeds & salt,roast of in deep roasting tray & cook of for around 10 minutes stirring occasionally. Drizzle in syrup & roast for a further 5 minutes, remove& cool.

·        To serve place granola in bowl, remove plums from syrup & place on granola & finish with yogurt
