1 butternut squash, grated and roasted
6 large carrots, grated
500g panko breadcrumbs
1 tsp cumin
1 tsp coriander
Sea salt and pepper
1. Preheat the oven to 180°C.
2. In a bowl mix together the butternut squash, carrots, breadcrumbs, cumin, coriander and a pinch of salt and pepper.
3. Drizzle a baking tray with olive oil and add the butternut squash mix.
4. Bake in the oven for around 15-20 mins or until golden brown.
5. Adjust seasoning as required.
