Roasted Squash and Carrot Hash

Ingredients

1 Butternut squash, grated and roasted

6  Large carrots, grated

500g Panko breadcrumbs

1 tsp Cumin

1 tsp Coriander

Sea salt and pepper

Instructions

1. Heat the oven to 180c.

2. In a bowl mix together the butternut squash, carrots, breadcrumbs,  cumin, coriander and a pinch of salt and pepper.

3. Drizzle a baking tray with olive oil and add the butternut squash mix.

4. Bake in the oven for around 15-20 minutes or until golden brown.

5. Adjust seasoning as required.
